Sustainable restaurant and hotel in Innsbruck

As a traditional establishment in the heart of Innsbruck, a responsible use of resources is especially important to us. For our hotel and restaurant, sustainability does not mean perfection, but conscious action in everyday life and the continuous development of our establishment.

Regionality and quality

At Goldener Adler, we consciously focus on fresh seasonal products from the region. Short transport routes, sustainable agriculture and personal relationships with our suppliers are a matter of course for us.

Our ingredients come predominantly from Tyrol and Austria. From meat and vegetables to our beverages, we work closely with selected producers who share our values: quality, sustainability and responsibility.

For us, honest flavour takes centre stage, freshly prepared, regionally minded and served with care.

As a quality tested Tyrolean inn and partner of Agrarmarketing Tirol and Bewusst Tirol, we live this attitude every day.

Resources and responsibility

Act consciously. Conserve resources.

For more than 600 years, Goldener Adler has stood for living history. The masonry dates back to 1390 and preserving this historic substance is our highest priority. Instead of new construction, we consciously rely on extensive and faithful renovation and combine it with modern technology in order to preserve the unique atmosphere while at the same time enabling sustainable operations.

Efficient energy and cooling technology, heat recovery and the ongoing use of LED technology help us to use resources purposefully and save energy sustainably.

We also monitor the environmental impact of our operations through regular carbon footprint assessments. For 2024, a carbon footprint of 100.77 tonnes of CO₂e was calculated for the Goldener Adler. Recording these values helps us continuously review our measures and identify further opportunities to reduce emissions. Our goal is to gradually reduce the carbon footprint of our hotel and restaurant even further.

For us, sustainability is reflected in everyday actions. Our table water is treated directly in house. In this way, we save around 22 tonnes of empty containers every year and reduce transport routes as well as packaging material. Our drinking straws are made of glass. In this way, we consciously avoid plastic. We use biodegradable disposable napkins made of cotton and thus avoid extensive washing and delivery processes.

At Goldener Adler, experienced professionals and committed young talents work hand in hand. Many of our employees have been with the establishment for years, while at the same time we consciously invest in the training of young people and give them responsibility from the very beginning. Here too, our understanding of sustainability becomes visible.

As an award winning training company of the Province of Tyrol, we attach great importance to sound training. At our establishment, craftsmanship is not only taught, but lived. Our apprentices learn to take responsibility, understand quality and develop step by step.

Goldener Adler is run as a family business. The kitchen and the establishment are led by Madlen and Thomas Hackl with great experience, passion and a clear commitment to quality. This personal leadership shapes the atmosphere throughout the entire establishment.

Regular training sessions and workshops deepen this knowledge in practice. It is not only about technique, but about the conscious handling of food, quality and craftsmanship.

Shared activities and an appreciative sense of togetherness strengthen our team and create the foundation for our guests to feel completely at ease as well.

Goldener Adler is centrally located in Innsbruck’s old town and is ideally accessible by public transport. From the main station, you can reach us in about 15 minutes on foot or conveniently by bus and tram to the immediate vicinity.

Thanks to our location in the pedestrian zone, you benefit from short distances within the city.

Travelling by public transport is not only comfortable, but also a valuable contribution to environmentally friendly travel. Arrival by car is also possible. A hotel loading zone for unloading is available at Innrain, and parking facilities are located in the nearby Altstadtgarage.

Community and responsibility

Act together. Make a difference.

Sustainability depends on every individual. Our guests can also support us, for example through the conscious use of water and energy during their stay.

Clearly labelled bins for paper, plastic and residual waste are available on every floor. This helps us support easy waste separation and the recycling of valuable resources. Our housekeeping team is always happy to assist if you have any questions.

We also take a responsible approach to resources when it comes to laundry. You decide for yourself when hand towels, bath towels and bed linen should be changed and can thus save water and energy very easily.

We are always pleased to receive suggestions and ideas. For us, sustainability is an ongoing process that we continue to develop together.
